Recipe for Roasted Pumpkin Curry

Instructions for Roasted Pumpkin Curry
  1. Turn broiler on high and roast pumpkin until slightly golden.
  2. Combine coconut milk, fish sauce, sugar, and curry paste in a pan and bring to a boil.
  3. Reduce the heat and add bell pepper, carrots, edamame, green peas, and roasted pumpkin.
  4. Simmer until bell pepper and carrots are soft.
  5. Serve with steamed jasmine rice.

Also, you can substitute chicken, shellfish, or tofu for the edamame

Ingredients
  • 1/2 of  1 small pumpkin seeded, peeled, and cubed
  • 1 can of coconut milk
  • 1/2 cup of water or chicken/vegetable stock
  • 2 or 3 tbsp of red curry paste*
  • 2 or 3 tbsp of fish sauce*
  • 4 or 5 tbsp sugar*
  • 1 red bell pepper julienned
  • 1 cup edamame
  • 1 cup of green peas
  • 1/2 cup of chopped carrots
  • 1 cup of steamed jasmine rice
  • *Tips: Adjust sugar, curry paste, and fish sauce to your liking.

Recipe for Pumpkin Chocolate Chip Muffins

Pumpkin Chocolate Chip Muffins

  1. Preheat oven to 400 degrees.
  2. Grease muffin tins or line with paper liners.
  3. Mix sugar, oil, a nd applesauce in a large bowl (or you can use a stand mixer).
  4. Add pumpkin and water.
  5. In different bowl mix together the dry ingredients.
  6. Add to wet mixture in batches to incorporate fully.
  7. Mix in chocolate chips, walnuts, flax seeds, and pumpkin seeds.
  8. Fill muffin cups 2/3 full with batter.
  9. Bake in preheated oven for 20-25 minutes (or so, depending on your oven).
Ingredients
  • 3/4 cup raw sugar
  • 1/4 cup canola oil
  • 1/2 cup applesauce
  • 3/4 cup pumpkin puree
  • 1/4 cup almond milk
  • 1 1/2 cup whole wheat flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup walnuts
  • 1/2 cup pumpkin seeds
  • 1/2 cup flax seeds
  • 1/4 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup dark chocolate chips

Pumpkin Cheesecake Recipe

This a fantastic recipe for pumpkin cheese cake.  It was modified by Sinbad at OpenSourceFood.

It is based on his fathers recipe and modified to suite his tastes. To modify it He added rum and some brown sugar to complement the pumpkin, cinnamon, nutmeg trio. He also decided to add some cream and vanilla to match other cheesecake recipes. It’s not too sweet and has that rich, creamy New York-style cheesecake taste.

Ingredients

Filling

  • 600 g cream cheese
  • 3/4 cup sugar
  • 3 Tbsp brown sugar
  • 3 eggs
  • pinch of nugmeg
  • 1/4 cup of flour
  • 1 cup pureed pumpkin (boil and dump in the blender)
  • 1 tsp cinnamon
  • 1 tsp rum
  • 1/4 cup whole cream
  • 1/2 tsp vanilla

Crust

  • butter
  • graham crackers

Directions

  1. Crush the graham crackers and mix with butter in the cake pan to create the crust. Let it sit in the refrigerator for an hour.
  2. Cream the cheese with the sugars with an electric mixer or by hand if you’d like the exercise. It should be creamy and fluffy.
  3. Add the eggs one by one folding well into the mixture. After the eggs have been mixed in, add the rum, cream, and vanilla.
  4. In a separate bowl sift flour with cinnamon, nutmeg. Mix in the pumpkin puree.
  5. Add the pumpkin mixture to the cream cheese mixture and stir together until smooth.
  6. Pour the mixture into your cake pan and set in a shallow pan filled with water. The water should come up to less than half of the cake pan. Place in an oven that’s been preheated to 180 degrees C (350 degrees F)
  7. Bake until a knife comes out clean. Let sit until it comes to room temperature and store in the refrigerator. Let sit at room temperature 30 minutes before serving. Ingredients

Not only is this pumpkin rotten, some kind souls decided to smoosh it a bit by walking on it.  No, it wasn’t me, my shoeprint wouldn’t fit!

Pumpkin shortage!

It seems 2006 is a bad year for pumpkins across the country.  Pumpkin shortage stories here and here. If you like rotten pumpkins however, it is a bumper crop!
